Region: Apulia, Salento
Harvest: Second half of September.
Fermentation: Temperature-controlled maceration for about 6 days,
followed by alcoholic fermentation with selected yeasts,
according to modern vinification techniques.
Color: Ruby red.
Nose: Intense flavor, with notes of plum and cherry,
spicy, with rosemary and vanilla scents.
Palate: A full-bodied wine, soft and balanced between
acidity and tannins, easy to drink.
Aging: 6 months in French oak barrels.
Serving temperature: 16-18°C
Suggested serving: Throughout the meal,
it seamlessly combines with meat sauce pasta,
grilled or cooked meat and medium-cured cheese.
